Spotted Trotter Nduja and Guanciale
This week we’re highlighting our two favorite products from our friends at Spotter Trotter.
Nduja
‘Nduja is a 100% pork based spreadable salami made from pork belly, jowl, and shoulder. A soft and supple salami with developed spices, some smoke, and a bit of heat. This is a unique salami that can be eaten as a smear on crostini or baguette. As an alternative, it is wonderful to cook with in any tomato sauce that needs a bit of heat and depth.
Guanciale
Guanciale is an Italian cured pork jowl or cheeks. Its name is derived from guancia, the Italian word for ‘cheek’. The Spotted Trotter makes this delicious cut from Pasture Raised Pork that is finished with Toasted Fennel, Orange Zest, Toasted Black Pepper and Rosemary. It is Fermented and Hung to Cure for 6 Weeks. Great for all dishes that require depth in flavor looking for a buttery, meaty, unctuous Finish. Slice thick and render for a great bite texture, render thin and get
it crispy.

Seafood Highlights
Sea Scallop landings remain low. Prices has remained steady, although still very expensive.
Wild Striped Bass Supply has been more consistent.
While local fishing has picked back up, Black Seabass supply remains low and expensive.
Canadian Hard Shell Lobsters remain costly.
Beautiful Yellowfin Tuna arriving from Seychelles. Catches of Yellowfin and Big Eye Tuna remain strong.
Swordfish coming from Canada and Brazil. Supply is limited, and looks to remain that way next week.
Halibut supply has tightened up, and prices are creeping back up.
Fresh Squid is in good supply.
Thanksgiving will force some supply issues next week with everyone being fishing being closed for a day.
