Editorial

Frozen “”dirty”” loligo squid from The Town Dock offers chefs a premium option for preparing calamari to their exact specifications. Plus, because it’s frozen whole, it is not as delicate or perishable as fresh squid.

Harvested primarily in Rhode Island waters, loligo squid is a staple in the region’s seafood industry. The Atlantic coast provides ideal conditions for squid, with cool waters and abundant prey contributing to their thriving population. Wild trawl catching is the primary fishing method employed to capture loligo squid, ensuring a consistent and sustainable supply for both commercial and recreational purposes.

From a sustainability standpoint, loligo squid is considered a relatively resilient species with healthy population levels in the Atlantic Ocean. Fisheries manage squid stocks carefully to prevent overfishing and maintain ecosystem balance.

In the kitchen, frozen dirty loligo squid offers chefs versatility and convenience. Whether fried, grilled, or sautéed, loligo squid lends itself well to various culinary applications. Its mild, slightly sweet flavor pairs harmoniously with a wide range of seasonings and sauces, making it a favorite ingredient in appetizers, salads, pasta dishes, and more.

If frozen dirty loligo squid is unavailable, chefs can consider other types of seafood with similar characteristics, such as octopus or cuttlefish. While these alternatives may differ slightly in flavor and texture, they can still provide a delicious and satisfying culinary experience.
