Renowned for their distinct yet mild flavor profile and relatively small size, West Coast oysters are shaped by the cold, nutrient rich waters of the Pacific Ocean. The Crassostrea Gigas and Crassostrea Sikamea (aka Kumamoto) species are native to Japan, but are now farmed throughout the Pacific Northwest and Northern California. These oysters tend to have sweet, melon and cucumber flavors that make them a nice change of pace from their brinier East Coast cousins.
