Bay Scallop Season is Ramping Up!
Bay Scallop Season is here, bringing with it the sweet, succulent shellfish prized by seafood lovers. These delicate morsels, harvested from shallow coastal waters, are available from early fall through late winter – perfect for elegant dishes that capture the taste of the season.
Supply is still ramping up and prices are starting to drop. Reach out to you sales rep for availability.
Stone Crabs are also on the move…
The stone crab season is now underway. As typical with early season patterns, prices are starting high but are expected to moderate as the season progresses.
These prized crustaceans are primarily harvested from the warm waters of the Gulf of Mexico, particularly around the Florida Keys, which produces some of the finest stone crab claws available. Following sustainable harvesting practices, only legal-sized claws are collected while the crabs are returned to the water, where they can regenerate new claws.
Australian Prawns are in House
Harvested from the pristine depths off Australia’s coast, these exceptional prawns are a rare delicacy. Their distinctive sweet flavor comes from feeding on unique local plankton in some of the world’s cleanest waters.
What makes these prawns even more special is their limited availability – they’re sourced from small, carefully managed wild fisheries that operate under strict Australian government and MSC certification, ensuring both sustainability and premium quality.
