Guanciale is an Italian cured pork jowl or cheeks. Its name is derived from guancia, the Italian word for ‘cheek’. The Spotted Trotter makes this delicious cut from Pasture Raised Pork that is finished with Toasted Fennel, Orange Zest, Toasted Black Pepper and Rosemary. It is Fermented and Hung to Cure for 6 Weeks. Great for all dishes that require depth in flavor looking for a buttery, meaty, unctuous Finish.
