The holiday season has arrived, and securing your premium ingredients starts with timely preorders. From caviar to bay scallops, we need your advance notice to guarantee availability for your holiday menu planning.
Here is a quick list of holiday favorites that require more than a days notice for delivery:
Caviar – 2 days (While we keep a good in selection in house at all times, we offer a wide variety of species in different sizes which require a preorder)
Foie Gras – 5 days
Fresh Bay Scallops – 2 days
Stone Crab Claws – 2 days
Jamon Iberico – 1 week
Turbot – 1 week (Order Monday for following Monday delivery)
Additionally, For large-volume orders of our standard items, please provide a 3 day notice to ensure full quantities. Contact your sales rep for pricing and detailed availability. Orders received after these timeframes cannot be guaranteed for your requested delivery date.
Bruce Gore Wild Alaska Coho Salmon
Bruce Gore and his company, Triad Fisheries, have been marketing hook-and-line caught wild salmon from southeast Alaska since 1978.
These King Salmon are caught using slow hook-and-line method to minimize stress, processed immediately on-board, and frozen within 90 minutes. Each fish is then individually hand dipped in fresh seawater to create a protective glaze and tagged to ensure each fish is traceable to the source.
Seafood Highlights
We have a great deal on Head-On Ecuador Prawns!
Sea Scallop landings remain low. Prices have remained steady, but will likely increase through the holiday season.
Hokkaido Scallops! U/15 and 10/20 sizes will soon be available, and U10s will be in house in a few weeks. The prices are currently coming in below our normal North Atlantic offerings as landings are much higher in Japan. Prices should rise slowly over the next few months, but will likely still be below that of the North Atlantic Scallops.
Wild Striped Bass Supply has been more consistent.
Black Seabass landings seem to be back to normal.
Canadian Hard Shell Lobsters remain costly.
Beautiful Yellowfin Tuna arriving from Seychelles. Catches of Yellowfin and Big Eye Tuna remain strong. Look for prices to increase leading up to Xmas and NYE.
Swordfish coming from Canada and Brazil. Catches have been low for the last few weeks.
Halibut supply remains tight. There have been record low catches over the past 2-3 weeks.
Fresh Squid is in good supply.
